
3 Cups Cooked Rice (I use white, but other varieties work too)
1/4 Cup Oil (I use olive oil)
1 Cup Milk
2 T Onion Flakes
1 Package Frozen Spinach (rectangular frozen chopped spinach)
1 lb Grated chese + some saved for top of dish
4 eggs, separated
Mix all ingredients except egs. Separate eggs and put yolks in with the mixture, and put whites in a separate bowl. Beat egg whites until fluffy. Fold into the rest of the mixture. Put in 13" x 9" pan, and sprinkle with cheese on top. Bake for 35 minutes (or less) in a 350 degree oven.
This recipe is a great source of Folic Acid, which is especially important for younger women's diets. Folic acid prevents birth defects like spina bifida.
